Low-waste market shopping in Saigon: what to buy, when to go, what to carry

What a green market actually is

There is nowhere special to go. A green market is not the name of a place; it is a way of shopping that produces less waste, favours what is fresh and in season, and supports the sellers near where you live. It might be the traditional morning market down the road, a corner where someone sells vegetables from their own garden, or the produce counter of the supermarket near you. What matters is how you buy, not what the place is called.

Saigon is full of traditional markets already. You do not need to find a particular one — only to shift your habits slightly: carry your own containers, buy the amount you will actually use, and choose seasonal produce over things sold pre-packed.

Which hours mean less waste and less crowding

Early morning, 5am to 7am

This is when the vegetables have just arrived, still fresh and still bundled. The sellers are setting up, and are relaxed about putting things straight into your basket or container rather than reaching for a new plastic bag for each item.

Late afternoon

Produce is usually cheaper then, because sellers want to pack up early. The trade-off is less to choose from — the best of it has generally gone by morning.

What to carry

  • A cloth bag, or a bamboo or sturdy plastic basket with handles
  • A rigid plastic or stainless box for tofu and anything fresh that needs to keep its shape
  • A water bottle — a morning at the market is warm work
  • Small notes, so paying is quick and nobody is hunting for change

That is the whole list. Nothing elaborate is needed.

What to buy

Favour what is fresh, in season, and wrapped in as little as possible:

  • Seasonal vegetables — water spinach, mustard greens, squash, luffa, whatever your market has
  • Tofu, dried pulses, sesame and peanuts
  • Seasonal fruit, in the quantity you will eat over a few days
  • Fresh aromatics: lemongrass, ginger, turmeric, spring onion

Avoid heavily packaged goods where an equivalent is sold loose. Buying only what you need cuts waste too — food thrown away is no less wasteful than a plastic bag.

Breakfast afterwards, when there is no time to cook

Plenty of people come back from the market with no time left to cook before work, and need something quick. A vegan banh mi is the tidy answer: nothing to cook and no washing up.

At Banh Mi XANH there is Thập Cẩm at 59,000d, Chả Lát Chay at 53,000d, Đậu Hũ Cay at 56,000d, Bơ Đường at 28,000d for something light, and the big Thượng Hạng Premium at 75,000d if you want it to last longer. To drink: Black Coffee at 35,000d, Nut Milk Coffee at 45,000d, Jasmine Lemon Tea at 36,000d, Nut Milk Bubble Tea at 45,000d, or the Brown Sugar version at 48,000d.

If the market is on your way, call in at one of the five shops: 38 Lê Thị Riêng, 15B Nguyễn Thị Minh Khai, 2B Trần Hưng Đạo and 148B Đề Thám in District 1, or 210 Bùi Văn Ba in District 7. They are open 24 hours, so however early you shop there is food ready. If it is not convenient, call 0923.183.183 for delivery; orders from 500,000d within 5km are delivered free.

Bring your cloth bag or your own box when you come in, and tell the staff you do not need a plastic bag — the paper wrapping is enough.

One last thing

Shopping this way is not a one-off. It is a habit repeated a few times a week. You do not have to get all of it right from the start; one fewer plastic bag each trip is already a difference.

Quick questions

How is a green market different from an ordinary one?

Not in the location but in how you shop. Bring your own containers, buy the amount you need, choose what is in season — and the familiar market down the road becomes a green one.

What hours give fresh produce without the crowd?

Between 5am and 7am, when the vegetables have just arrived and the sellers are not yet busy. Late afternoon is cheaper but the choice is thinner.

What can I use instead of a bamboo basket?

A cloth bag, a mesh bag, or a rigid plastic box with handles all work. What matters is having something reusable so you are not taking a new plastic bag each time.

What should I carry tofu in?

A stainless or rigid plastic box with a lid, and ask the seller to put it straight in. Tofu is soft and breaks easily, so a firm box beats a thin bag.

What is there to eat when the market has taken up the whole morning?

A vegan banh mi fills you up with nothing to cook. Call in at one of the five Banh Mi XANH shops, open 24 hours, or call 0923.183.183 for delivery.

Is a small order still delivered free?

Free delivery applies from 500,000d within 5km. Smaller orders are still delivered — there is simply a delivery charge based on distance.
